'Best ever' Pumpkin Soup!
Staying home today, on the couch, with some soup....having time off work for a terrible cold, I probably shouldn't go to the footy, so I'll watch it on TV, with the heater on!
So, onto that 'Best Ever' soup!
So, so simple and truly, so good!
Boil up some pumpkin and when it's almost done, pop a packet of chicken noodle soup into the water.
In some olive oil, fry up some garlic, onion and bacon.
Then puree it all together, with lots of cream.
Honestly, thats it!
Together with some crusty bread, its comfort food at its best!
I'm sure you could add lots of other yummy stuff to it and make it even more super delicious...actually there was some grated carrot left over from salad sandwiches, so I popped it in too!
So, get comfy, warm up some bread and enjoy some soup.
Isn't Winter just lovely.....

Lots of colds have been going around at school the past week. I actually can't remember the last time I had one. Love pumpkin soup. Usually put a bit of curry in mine. Even though it's summer here and temps are 45 C and above, I still make and enjoy soup. Hope you're feeling better. Best wishes, Tammy

I just love pumpkin soup...sometimes we fry the pumpkin and onion in red curry paste first...mmmm!
